I move websites off cPanel and Plesk onto clean Linux servers running nginx, and I do it without your site going down.
Panels are convenient until they are not: licence costs, bloat, PHP versions you cannot change, and a control panel sitting between you and your own server. Moving off one is not a file copy. It is nginx vhosts, PHP-FPM pools, SSL, cron, database users, permissions, and mail that has to keep flowing the entire time.
I run a multi-tenant Linux host serving production sites behind Cloudflare, so this is the work I do anyway.
