Does this guarantee I won't get an ADA lawsuit?
No one can guarantee that but building to WCAG 2.0/2.1 AA from the start is the strongest defensible standard, and this isn't legal advice.
Will it still look good, or just "accessible and plain"?
Accessible design and good design aren't opposites — I design within WCAG guidelines so it looks professional and works for everyone.
